What a Guy!
I was ready to accept the fact that I would have to be inconvenienced to do EVERYTHING on the computer. (b/c lets face it, everything is on the internet right now, banking, information - how many times a day do you look at the internet, not even for FB, but for everything). But I knew it's not the end of the world, and that it's not really that bad, and I could live without it. I also knew I could go to someone's house or to the library and everything would be fine. I didn't even complain really about it, just tried to accept it as life.
But, now we have a computer again. Still no word on when we will get our old one back. But we have this little one. It's very practical for us, especially right now. But even for future. I'm thankful for Richard in realizing that I would miss my mom a lot!
Thank you Richard for showing me in a big way that you care about me and want to make me happy. I don't think you even realize how much it showed me that. :)

Going Offline
I guess I'll resort to reading the books I have to read more each day. So if you don't hear from me for a while, now you know why, and you can be praying that miraculously we get a computer back faster than they say.
On another note. Richard seems to be feeling better after starting some medicine and is on the upswing hopefully. I only have my nasty cough (that if you know me at all, I have %50 of the year), but carson is running a high fever all day. He has had no play time with his cousins, and is very sick. I might be going home a day early. No sense in being sick here when we could just be sick at home. I hope he gets over it fast and comes back to his healthy self.
Have fun everyone in Cyber world!!! Don't do anything fun without me!

Cutie Patootie
We had a tiny photo shoot with Landon this Sunday. His Aunt Stephanie gave him this adorable outfit. He looks so cute. His hat of course didn't stay on - so after church, I put it on and then carried him all around showing him off b/c I thought everyone needed to see him that day. :)

Biscotti recipe
Cinnamon Sugar Biscotti

Yield: about 20-24 cookies
Ingredients:
For the dough:
2 cups all-purpose flour
1½ tsp. ground cinnamon
1 tsp. baking powder
¼ tsp. salt
1 cup sugar
6 tbsp. unsalted butter, at room temperature
1 large egg plus 1 large egg yolk
1 tsp. vanilla extract
For the topping:
¼ cup sugar
1 tsp. ground cinnamon
1 large egg, lightly beaten
Directions:
Preheat the oven to 325˚ F. Line a baking sheet with parchment paper or a silicone baking mat. In a medium bowl, combine the flour, cinnamon, baking powder, and salt; whisk to blend and set aside. In the bowl of an electric mixer, cream together the butter and sugar on medium-high speed until lightly and fluffy, 3-4 minutes, scraping down the bowl as needed. Blend in the egg and then the egg yolk, beating well after each addition. Blend in the vanilla until incorporated. With the mixer on low speed, blend in the dry ingredients just until incorporated and a dough is formed.
Divide the dough into two halves. Shape each half into a log 9 inches long by 1½ inches wide on the prepared baking sheet, spacing the logs at least 3-4 inches apart. In a small bowl, combine the sugar and cinnamon for the topping and stir to blend well. Lightly brush the tops of the logs with the beaten egg, and sprinkle generously with some of the cinnamon sugar mixture.
Bake for 40-45 minutes, rotating halfway through baking, until the tops are golden brown and slightly firm to the touch. Remove the pan from the oven but maintain the oven temperature. Once the logs are cool enough to handle, slice on the diagonal into 1½-inch slices (about 10-12 per log). Place biscotti cut side-down on the baking sheet and sprinkle with more of the cinnamon sugar mixture. Bake an additional 10-15 minutes, until crisp and golden.
Now the tricky part - when I made it the dough was super crumbly and dry which did not seem right to me. I had to press it all together and then into logs. I don't think that's how biscotti is supposed to be. I think it's supposed to be a lot wetter and stickier. But it still turned out great and you never would've known. But when I looked at another recipe for it (on allrecipes.com) it was the exact same thing, but only 2/3 cup of sugar. Maybe that would've helped. maybe my eggs weren't big enough, or maybe I should've put a whole stick of butter in it. I don't know. Something wasn't quite right. But it still tasted fine. and the texture was fine in the end.

5 Months and Cereal
Landon started Cereal the other day. He did terrible at it, hated, it and as you see by the last picture, ended up literally THROWING UP all over everything! Awful!!! (he would gag every time the spoon touched his tongue and eventually couldn't handle it anymore and threw up)He is doing better now, I tried the reclining position which works a lot better, and even loves it and is eating it almost like a pro.

Retreat
Well - this is exactly what I needed this afternoon - a cup of hot coffee (our house is freezing), homemade cinnamon sugar biscotti with nutella on it, and my bible. After way too many late nights (and not b/c of children) I decided to forgo my afternoon exercise and try to sleep, which didn't work, so I came downstairs and rested and hopefully refreshed myself. Just one of those days I guess.
